Ingredients
1 cup cottage cheese (full-fat or low-fat)
2 large eggs
1/2 tsp salt
1/2 tsp garlic powder (optional)
1/2 tsp oregano or Italian seasoning (optional)
Cooking spray or olive oil for greasing
Instructions
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Spray or lightly oil it.
2. Add cottage cheese, eggs, salt, and seasonings to a blender or food processor. Blend until smooth.
3. Pour the mixture onto the prepared baking sheet and spread evenly into a circle or rectangle.
4. Bake for 35–40 minutes or until edges are golden brown and the top is set.
5. Remove from oven and allow to cool on the tray for 20–30 minutes—do not skip this step!
6. Once cooled, slice, roll, or use for wraps, pizza, or sandwiches.
Notes
Make sure to blend the cottage cheese until completely smooth—this is what gives the wrap structure.
Let the flatbread cool completely before peeling or slicing. This prevents cracks and tearing.
You can double the batch and freeze extras between sheets of parchment.
